Summary: Get a good cocotte
Comment: A good cocotte will transform your cooking. For years, I almost never braised; everything I did was cooked on the top of the stove. This is my second serious cocotte, because now I braise every week and often braise twice. Because braises actually improve with time, they're terrific for cooking on weekend afternoons and saving for those busy Tuesday and Thursday dinners.

Not quite as steam-tight, I suspect, as my Le Creuset, but this one cleans up better and works terrifically for smaller cuts of meat, like short ribs for two or simply a couple of duck legs -- that would be lost in a larger round pot.

Comment: Just a note that this design is sub-optimal if you plan to use it in an open fire, probably fine for oven use.

For use in a fire, look for one with a relatively flat lid with a raised edge.
