Customer Rating: Summary: Excellent Cupcakes and cake! Comment: This mix, along with Pamela's vanilla frosting mix (I use spectrum palm oil shortening to keep it dairy free), makes delicious cupcakes or cake - excellent texture and taste. It is the only gluten-free thing my husband has tried that he will voluntarily eat again and again! HIGHLY RECOMMENDED!! Customer Rating: Summary: Great Gluten Free Cakemix Comment: After trying a few Gluten Free cake mix products and not being very satisfied with the results, I was extremely excited to finally find a product that makes a wonderful cake that has great texture and taste. I have taken cakes to parties and everyone is enjoying the dessert without even knowing it is Gluten Free. Customer Rating: Summary: Okay, but don't expect too much Comment: The Pamela's Products chocolate cake is heaven. This vanilla cake is... well, bearable if you have to eat GF food. Honestly, there are many GF recipes out there to make a sponge cake from scratch that taste way better, so if you don't have to have this product, make your own or buy the chocolate one. This cake is tough and chalky (and yes, I've made it several times and followed all the instructions). It also has a faintly bitter, salty flavor that gives it an unpleasant aftertaste. The chocolate cake can pass for a wheat cake with my non-Celiac friends, but this one is easily recognizable as GF. Maybe if it was modified with other ingredients/flavors as other reviewers have commented, then it might taste better. As a plain white cake, though, it's just not great. Customer Rating: Summary: Pamela does it again! Comment: I love this mix. Can make it into other recipes as well. Great job, Pamela! Customer Rating: Summary: Makes great cupcakes Comment: Great texture and taste. Makes a good pineapple coconut cake. Today, I took a batch of cupcakes to a BD party (iced with Pillsbury Fluffy White icing and coconut) and didn't bring any home. Everyone was astonished that it was GF (all non-Celiacs).
One package makes one layer of a cake or 14 cupcakes (but I always make 12 really big ones).
