Erythritol, a ployol (sugar alcohol), is a good-tasting sweetener which is suitable for a variety of reduced-calorie and sugar-free foods. It can be used as a sugar substitute in most sugar-free recipes. Erythritol has been part of the human diet for thousands of years due to its presence in foods such as pears, melons, grapes and mushrooms. NOW Erythritol is 100% pure and derived from a corn source. Erythritol resembles sugar in consistency and taste but has a caloric value near zero. It is also a great sugar alternative for diabetics. Eyrthritol, like Xylitol, may also inhibit cavities by denying plaque bacteria the fuel (sugar) it needs to erode tooth enamel. Customer Rating: Summary: Great stuff! Comment: If you do some research on natural sweeteners with a zero glycemic index, you will see that Erythritol is one of the best. It is a sugar alcohol found in various fruits and vegetables like Xylitol. But unlike Xylitol, it is not dangerously toxic to dogs and does not have bloating, gaseous or laxative effects. If you don't need a sweetener without blood sugar effects, you can look at brown rice syrup or agave, since they have a very low effect on blood sugar. If you want no blood sugar effects at all, I'd recommend this, since it has a very nice taste (like sugar) with no aftertaste. Stevia is another option, but is very strong and has a less appealing taste. If you use even a bit too much, Stevia generally has a rather bitter aftertaste. This is not true of Erythritol.
Note: If you want to buy this particular item, I discovered that this company has not charged me extra shipping for more bags going to the same address. I would avoid EmeraldForest, though, because the Erythritol I got from them had a very strange, foul smell -- like mothballs -- and had a faint aftertaste that was the same. Their customer service was very nasty when I called to return it. I am sticking with this one from now on. Customer Rating: Summary: Tastes just like sugar Comment: I am not interested in baking desserts. I just want a low-carb sweetener for the few cups of tea I drink in the morning. I've been using agave nectar, which has a low glycemic load. It is hard to believe that it is ok because it is so delicious. I still have to count the carbs/calories with agave nectar, though.
I have tried nutrasweet, splenda, stevia, and xylitol. Erythritol delighted me because it tastes just like sugar and easiest to use because it measures almost the same. It is more economical in bulk. If you haven't tried Eythritol as a sugar substitute, and are looking for something that tastes just as good, but doesn't have the same drawbacks as sugar...this is it. Give it a try for yourself. Customer Rating: Summary: Very good stuff. Comment: I tried this so far with 2 recipes. One was banana bread and the other is with canned apples. It's really hard to tell that it's not sugar. I typically mix about 33-50% of this stuff and the rest with Splenda since it's so expensive. I didn't want the gastrointestinal side effects of the other sugar alcohols. In other words, you pee most of this stuff out instead of all of it going the other way.
It was worth trying for me. I have found a few good recipes using this stuff and I'll play with it more around Thanksgiving. Customer Rating: Summary: If you're cutting out sugar, this is the best sub yet! Comment: So many sugar subs don't carmalize like sugar or add the bulk. Those that do, often cause gastro-intestinal upsets, like Xylitol, and Manitol. Erythritol, although expensive, is as close to acting like real sugar without the carbs as I have found.
The only problem is that it is only 70 percent as sweet as sugar. I have remedied this problem by also adding a tiny percentage (1/2 tsp per cup of Erythritol). This makes up for the sweetness without the bitterness of Stevia. The two go very well together. I am working on a cookbook using this combination.
I also use Splenda, but it doesn't carmalize or add the bulk that baked ingredients need so I only use it when those things aren't needed.
