Summary: Great introduction to bread baking
Comment: Although I've enjoyed baking for years, I always found baking bread to be intimidating, until I bought this book. I dove right in, and using their recipes had great results almost immediately. But I think one has to keep it in perspective. Their technique will not enable you to produce the same result as the best traditional bakeries in just five minutes a day. It's not possible to reduce to just a few easy steps a craft which has been two thousand years in development and which professionals spend a lifetime mastering.

However, following the technique of this book, I have produced bread which is almost as good as the best traditional bakeries (8.5 on a scale of 10), easily better than the mass produced commercial "artisan" breads at my local grocer, and dramatically better than a conventional supermarket loaf.

This book has helped me to understand that producing really good bread at home isn't all that difficult. Now I feel that I can start to learn the craft of bread baking in earnest. If you've been hesitant about baking bread at home, this book is a great place to begin.

Summary: good bread in next to no time
Comment: I bought this book because of an article in the New York Times that gave the basic bread recipe from this book. My experience with the basic recipe has been so satisfying that I have not yet ventured into the others in the book. It is definitely the easiest bread recipe I have ever tried, and the results are as tasty as any homemade bread I have eaten. This bread is my usual contribution to potlucks at church and work, and if there is any left, someone always wants to take it home.

A coworker to whom I gave a copy for Christmas came in and raved about the recipe for brioche, so it seems that the other recipes are also good.

The book is nicely produced with good illustrations, legible type, and binding that lies reasonably flat.

Anyone who wants to bake good bread at home should like this book.

Comment: fast and easy. makes several differnt peasant loafs and loads of other breads. very easy with no kneading is my kind of bread and only having to make dough once a week to 10 days is nice.

Comment: I was a baker by trade. Not all breads are created equal and there is a reason for that. Good artisan bread is as unique as the starter used. Some bakeries are still using the same starter... yes, the same starter they have used for 40 years. They just keep it going. This is where the superb flavor and texture come from. It is something that needs to be developed and it takes patience and time. The average home baker simply does not have the time to make superior artisan bread. I say if you want good quality artisan bread, go to a good artisan bread bakery. I bought a copy of this book and I have to say that I was quite impressed. I have made quite a few of the breads... and although they lack some of the flavor and texture of superior artisan breads... they will do the average home baker just fine. For something you can make so speedily, you can't lose. This is a fine way for the average person to have artisan looking bread on the table every day. What could be better than that? Most people would probably really never know the difference or really care unless they are a real artisan bread aficionado any way. I look for texture, crust and flavor in a really good artisan bread. This bread has good taste... but let's face it, flavor has to be developed over some time. I didn't find a thing wrong with this book and I really hate to see the negative reviews. I think that if you can get people interested in making a bread that is easy and fun... they will do it more often at home and that's what it is all about... who knows, they may turn out to be superior artisan bread bakers one day! Don't take the negative reviews to heart to much... this bread is fun, quick and no matter what anyone says... it is much better than the grocery store bread any day... have fun!
